The V-shape grilling grates are an integral feature of the Solaire Infrared grilling system. They:

catch drippings and vaporize the juices back into your meat to keep as much flavor as possible;
control the amount of drippings that do fall onto the burner surface to avoid quenching (extinguishing) the flame and reducing the infrared effect; and
minimizes flare-ups.

All Solaire V-shape grilling grates are made from stainless steel and should always be used in the V configuration.
